Sweet Heat of the South Burger

When the question is asked about fresh produce in Georgia, the most common return answer is the peach. This is a very clouded misconception.
Georgia is home to some of the proudest farmers in the country that pour all their love into a wide variety of fresh produce.
When you take the fresh produce that is grown with so much love and add the passion of a state that is consumed with their grill you really see some beautiful creations.
My mother and I travel once a month to a farmers market, that in my own biased opinion is second to none, an hour south to obtain beautiful ingredients for our Sunday recipes.
One ingredient I never pass up is a fresh Georgia jalapeno. This is the ingredient that sparked my imagination for the Heart of the South Burger. I hope you enjoy.

Ingredients:

Sweet Heat Salad Ingredients:
5 Jalapenos
3/4 Cup of Mayonnaise
1/2Cup of Sour Cream
1 Tablespoon Brown Sugar
1 Table spoon of Italian Dressing
1 Tablespoon Colavita extra virgin olive oil
3 Cups Shredded Cabbage

12 Slices thick Cut Pepper Bacon
2 Freshly diced tomatoes

Patties:
2 lb. Fresh Ground Chuck
21/2 tablespoons of Kosher Salt
11/2 tablespoons of Fresh ground Pepper
3 oz. of softened cream cheese
3 Cloves of finely pressed garlic
1/2 cup of grated yellow onion

Vegetable oil for Brushing Grill Rack
6 Potato Bread Buns
2 Freshly diced tomatoes

Instructions:

To Prepare:
Preheat Gas grill to Medium high heat

Place all 5 jalapenos on indirect heat of grill
Rotate jalapeno until charred and soft around all sides
Remove jalapenos
Cut off tops and half long ways
Remove seeds
Place jalapeno skins in food processor
Add mayo, sour cream, brown sugar Italian dressing, Colavita extra virgin olive oil, chop in processor until well blended and finely minced about 10 long pulses.
Mix dressing with cabbage in a large bowl until evenly distributed

Two large diced tomatoes
Place pepper bacon in heated fireproof skillet cook until crisp and set aside

To Prepare Patties:
Combine ground chuck, salt, pepper, cream cheese, garlic, onion mix well handling meat as little as possible to avoid compacting it divide mixture into 6 equal portions to fit potato buns
When grill is ready brush grill rack with vegetable oil gently place patties on rack and cook five minutes turning once for medium during last few moments potato bread buns cut side down on grill rack until lightly toasted
To assemble burgers:
Place pattie on bun bottom, two slices of bacon, equal portion of diced tomatoes, equal portion of sweet heat salad bread tops and serve
