Sweet Pea Bacon Burger with Smokey Sharp Cheddar Cheese

1 c Mayo
3/4 c fresh peas, remove from pods
1/3 c bacon, Hormel premium real crumbled bacon
2 t shallot, chopped
1/4 t freshly ground black pepper
1/8 t kosher salt
2 lbs ground chuck
2 t Kosher salt
1/2 t freshly ground pepper
Colavita EVV for brushing grill
6 slices smokey sharp cheddar cheese
6 potato buns, split



Pre heat gas grill to high. To make the Sweet Pea Bacon Sauce: Combine the mayonnaise, peas, crumbled bacon, shallot, black pepper and salt into a medium bowl. Stir together until incorporated. Set aside.

To prepare the patties: Combine chuck, salt and pepper in a large bowl. Mix together using your hands. Dividie the seasoned ground chuck into 6 equal parts and form into patties. Brush the grill rack with olive oil. Place the patties on the grill, cover and cook for 5 minutes. Turn the patties, and continue cooking another 5 minutes. Place the cheese slices on teh patties during the last 3 minutes of grilling. Place the buns, cut side down, on the the outer edges of the rack to toast lightly during the last 2 minutes of grilling. To assemble the burger: slather tht top of the bun with 3 T of Sweet Pea Bacon Sauce. Place the patties on the bottom bun and add the bun top and serve.
