Tangy Watermelon and Pineapple Burgers

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.


Avocado Spread
1 large ripe Haas avocado, mashed
3T. mayo
2t. fresh lemon juice
1/4t. salt Patty mix
1 3/4lb. 80/20 ground beef
1/4lb. ground pork
3T. Sweet and Spicy Caribbean Jerk seasoning
2t. salt 1/3c. Teriyaki
3T. fresh minced garlic (jarred)
2T. Sutter Home White Merlot
Colavita Olive oil, to spray on grill rack
6 1/2" slices of seedless watermelon, cut to patty size
6 rings of Dole pineapple, canned
6 large sesame burger buns, split and toasted

Turn a 4 burner gas grill on HI. To make the Avocado spread: combine the avocado, mayo, lemon juice and salt in a bowl, mixing well. Cover with plastic wrap on the surface of the mixture, set aside (refrigerate if possible). To make the patties: combine the ground beef, ground pork, Caribbean Jerk seasoning, salt, teriyaki, garlic and wine in a large bowl. Mix lightly, but thoroughly. Divide into 6 equal portions, patty out to size of buns. Turn the grill down to Medium HI, place the patties gently on the grill, turning only once. Cooking times differ on each grill, keep a good eye on the patties at all times. Place the watermelon slices on the grill along side the patties, turn when grill marks are nicely etched. Remove when grilled on both sides to a platter (takes only a few minutes, times differ on grills). When you flip the patties, spray the soft insides of the split buns with olive oil and place, oil side down, on grill to toast. Remove buns to platter when toasted, remove patties to platter when temperature reaches 160 degrees. The buns and patties should be done about the same time. To assemble: place bun, toasted side up, on table. Spread each top with a liberal amount of avocado spread. On the bottom bun, place a pineapple ring, then a patty, then a grilled watermelon slice. Place top on bottom, repeat for all 6 burgers and serve to a fascinated group, who may ask for seconds! Makes 6 tasty burgers.
