TAOS BURGER

Ingredients

1/3 cup canned black beans
1/4 cup minced red onion
1/4 lb chorizo
1 3/4 lb lean ground beef
2 TBS canned green chilies
1 tsp roasted minced garlic (from jar)
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
6 oz Monterey jack cheese
6 TBS salsa, such as Roasted Poblano
1 medium size avocado
6 7in whole wheat tortillas

 

Instructions

1.Drain black beans well and place in small bowl. Coarsely mash with fork. 2. Finely mince the red onion. 3. Remove casing from chorizo and place the chorizo in a large bowl. 4. Peel and slice avocado and place in covered dish. Set aside. 5. To chorizo, add beef and all other listed above ingredients through the black pepper. Mix thoroughly by hand until all ingredients have blended evenly. Shape into six rectangular patties, each approximately 4 x 2 1/2 inches in size. 6. Preheat grill and maintain on medium high heat. Place burger patties on grill. Cook 6 minutes each side or until medium well done. Just before burgers are done (about 5 min. after turning), place 1 oz Monterey jack cheese on top of each and keep on grill until melted (about 1 min.). Remove to plate and top each burger with 1 TBS salsa. Place each burger to one side of a tortilla, and add the slice of avocado. Fold tortilla over to cover burger and serve.
