Tasty Tuna Burger

1 Lg. can Albacore Tuna in water
1 sm. jar diced pimento
1 stalk celery diced
1/4 tsp. dill
1 Tbsp. lemon zest
2 Tbsp. lemon juice
1/2 C. 4C's bread crumbs and reserve
1c. 1/2 C.  Light Mayo
1 C. extra virgin olive oil
1 Tbsp. butter
1/2 C. Light Mayo
1 Tbsp. dill relish
1 Tbsp lemon juice
1/4 tsp. both salt and pepper



In a large mixing bowl, combine the first 8 ingredients together. Make 4 large patties and press both sides in the reserved bread crumbs. in a large frypan, add the extra virgin olive oil and butter on med-high heat. Add all four patties in the pan and fry on each side til golden brown. remove and place on paper towel to drain excess grease. Toast 4 buttered buns and place tuna patties on them. In sm. bowl, mix the remaining 5 ingredients together and spread generously on the bun and top the sandwich. offer lettuce and tomato as extra garnish. Enjoy!
