TEQUILLA CACTUS CHICKEN BURGER WITH BUTTERMILK AVOCADOS

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients

Buttermilk Avocados
1 large firm California Avocado
1 cup vegetable oil
½ cup flour
½ cup buttermilk
1 egg
2 teaspoon fresh ground pepper
½ teaspoon salt
Cactus
¾ cup softened butter
½ cup Tequila
1 medium size cactus leaf, skinned and julienned
1 small Vidalia onion, julienned
Patties
1 ½ pounds fresh ground chicken
1 1-ounce packet dry onion soup mix
½ teaspoon lime
Vegetable oil to grease rack
12 slices of smoked cheddar cheese
12 sliced of Texas Toast

 

Instructions

Place whole avocado in freezer for 1 hour. When almost ready, turn on grill to high heat. Pour, vegetable oil into a small fire-proof skillet. Remove avocado from freezer, peel and cut into ¼ inch thick slices. Place flour into a shallow bowl. Place buttermilk, egg, 1 teaspoon of ground pepper and salt into another shallow bowl. Dip avocado slices in flour, then buttermilk mixture; repeat. Carefully place slices in oil and fry for about 3 minutes, flipping once. Remove and place on paper towels to soak up excess oil. Cover and set aside. Turn down grill heat grill to medium-high. In a medium fire-proof skillet, place ½ cup of softened butter, tequila, cactus and onions. Cover and cook until most of the liquid is evaporated and the mixture has caramelized. Cover and set aside. To make the patties, combine ground chicken, dry onion soup mix, and lime in a large bowl and mix well. Divide mixture into 6 equal portions and shape into square patties to fit toast. Brush the grill rack with vegetable oil. Place the patties on the rack, cover & cook, turning once until done to preference. About 3 minutes on each side. When the burgers are almost done, place a cheese slice on top and melt slightly. During the last minute of cooking, brush the outer sides of the Texas toast with remaining butter. Place on outer edge of grill and toast lightly. To assemble, place two slices of buttermilk avocados on the bottom of a bread slice. Next place a burger and then a heaping of cactus onions. Top with other bread slice and enjoy.
