Teriyaki Lime Cilantro Burgers with Carmelized Honey Onions

Carmelized Honey Onions
3 tablespoons salted butter
1 tablespoon COLIVATA extra virgin olive oil
1 large Red onion, halved and sliced
1 teaspoon pepper
1 teaspoon salt
1/2 cup pure honey
1/2 Teriyaki sauce
Patties
2 tablespoon fresh garlic minced
1 tablespoon fresh ginger minced
1/2 cup fresh cilantro chopped
4 small limes squeezed
1/2 cup Teriyaki sauce
1 teaspoon salt
1/4 teaspoon pepper
1 lb ground beef
1 1b ground sirloin
1/2 cup gratted smoked Gouda cheese
1/2 cup grated mozzerella cheese
Colivata Olive Oil, for brushing on the grill rack
6 (4 1/2-inch) soft Kaiser rolls,split

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the carmelized onions,
place a 12-inch cast iron skillet in center of rack. Water droplets should sizzle, then roll around when dropped on heated surface.
Place butter and oil in pan, then add onions. Let sizzle for about 4 minutes. Meanwhile, combine pepper, salt, honey and terriyaki sauce in medium bowl, stir. Then add mixture on top of onions in pan, stir and let simmer for about 8 minutes. Cover and set aside. To make patties, combine garlic, ginger,cilantro, lime juice, teriyaki sauce, salt, pepper in a large bowl. Mix together, then add ground beef and ground sirloin. For a lighter texture and tender patties, handle the mixture as little as possible when mixing seasoning. The heat from your hands will melt the fat off of the patties. Divide mixture into six parts. Make a silver dollar size hole in the center of each divided portion. Then form portions into patties, cover cheese to keep in center of patty. Form patties to fit rolls. When grill is ready, brush rack with olive oil. Place patties on the center of the rack for a juicy and moist burger. Cover, and cook, turning once, until done to taste. Do not press burgers with spatula, you don't want the essence of the burgers on the grill. Cook 5-7 minutes on each side for medium. Once patties are done, place on a plate, and cover with tin foil to keep warm. Meanwhile, place skillet in center of grill rack to warm up onions. Then place the rolls, cut side down, on the outer edge of grill until lightly toasted. Spread softened butter on the cut side of rolls. Put rolls back on outer edge of grill for 1 min. To assemble burgers, on each roll bottom, place patties, place an equal portion of the carmelized onions on top of patties. Add the roll tops and serve. Makes 6 burgers
