Tex-Mex Beef and Chorizo Burgers with Pica Topping and Guaca-Limon Spread

Ingredients

Guaca-Limon Spread:
2 avocados (peeled, pitted, and mashed)
1 cup mayonessa con juego de limones (McCormick)
1/4 cup sour cream
1 tablespoon lemon juice
1 tablespoon garlic powder
1 teaspoon lemon pepper seasoning blend
1 teaspoon hot Mexican-style chili powder (McCormick)
1 teaspoon ground red pepper
1 tablespoon fresh cilantro (chopped)

Pica Topping:
1 fresh whole tomato (seeded and chopped)
1 fresh whole onion (chopped)
2 fresh jalapeños (seeded and diced)
2 tablespoons lemon juice
1 tablespoon lime salt
1 teaspoon fajita seasoning
1/4 cup fresh cilantro (washed, stemmed, and diced)

Burger Patties:
1 1/2 Ground Beef chuck
8oz ground pork Chorizo (casing removed)
1 egg
1/4 cup breadcrumbs
2 tablespoons fajita seasoning
1 tablespoon ground red pepper
1 tablespoon hot Mexican-style chili powder
2 teaspoons ground cumin
2 teaspoons salt
6 Kaiser rolls split
6 slices pepper jack cheese
Vegetable spray

 

Instructions

Prepare a medium-hot fire in a charcoal grill, or preheat gas grill to medium-high heat.

To make the Guaca-Limon Spread: Mash the avocados, and combine with mayonessa con juego de limones, sour cream, lemon juice, garlic powder, lemon pepper, and chili powder in a small mixing bowl. Mix well. Sprinkle red pepper and chopped cilantro on top. Cover and chill.

To make the Pica Topping: Combine the tomatoes, onions, jalapeños, lemon juice, lime salt, and fajita seasoning in a small mixing bowl. Mix well, cover and chill.

To make the burgers: Combine the chuck, Chorizo, egg, breadcrumbs, fajita seasoning, ground red pepper, Mexican style chili powder, ground cumin, and salt in a large chilled bowl. Handling the meat as little as possible to avoid compacting, mix well. Divide the mixture into 6 equal portions. Set aside.

Spray the grill with vegetable spray. Place the burgers on the grill. Cover and cook burgers, turning once until done to preference. It should take approximately 5-8 minutes on each side for medium. Place one slice of pepper jack cheese on each burger for 2 minutes. When melted, transfer all burgers to a large platter and cover with aluminum foil until ready to use. Place buns cut side down on grill and toast lightly.

To assemble burgers place the burgers on the bottom buns. On each burger place 1 tablespoon of Pica Topping and 1/2 cup of shredded lettuce. On top bun, spread 2 tablespoons of Guaca-Limon Spread. Place top bun and serve.
