Tex-Mex Pimento Cheese Burger

Ingredients

  • Pimento Cheese:
  • 3/4 Cup Mayo
  • 1 4oz jar diced Pimentos
  • 1 Tablespoon lime juice
  • 1 8oz block of Cheddar Cheese Shredded
  • 1 8oz block Pepper Jack Cheese Shredded
  • I Tablespoon taco seasoning, use taco seasoning mix reserve rest for burger
  • Cilantro for garnish (optional)
  • Burger:
  • 1Poundground Beef
  • 10 oz ground chorizo
  • 1 packet of Taco Seasoning (remember to reserve Tablespoon for pimento cheese)
  • Buns:
  • Texas Toast (freezer section)
  • 2 boxes for 6 portions
  • Condiments: (Optional)
  • Lettuce, tomato, avocado, pico de gallo, etc.

Instructions

  • Pimento Cheese:
  • 1.) In a large bowl, combine all ingredients, stir to incorporate all ingredients thoroughly.
  • You may also use a food processor to combine all ingredients, pulsing until the mixture comes together.
  • 2.) Cover with plastic wrap and refrigerate 2 hours to allow the flavors to come together.
  • (This makes more than needed, it makes an awesome snack with tortilla chips through the week!)
  • Prep any additional toppings you desire: Sliced Tomato, Lettuce, Onion, Avocado, Salsa, etc. (Make like its taco night if desired!)
  • Burgers:
  • 1.) Lightly oil grill with a neutral cooking oil, or spray. Then preheat grill to medium high heat.
  • Also a good time to preheat your oven for the Texas Toast.
  • 2.) Place the ground beef and chorizo in a large mixing bowl, add taco seasoning, and mix with your hands until the mixture is evenly combined. (Its that easy!)
  • 3.) Divide the meat into 6 portions. Form into a ball, then portion out the patties to be more oval than circular, this allows it to fit perfectly onto the Texas Toast!
  • 4.) Place the patties of the grill, cover and cook 4-5 minutes on the first side before flipping.
  • (While the patties cook this is a great time to place your Texas Toast in the oven.)
  • 5.) After the first flip of the burger, slather the pimento cheese on the cooked side. Then finishing cooking 4-5 minutes on other side or desired doneness.
  • Buns:
  • Follow directions on the back of the package. The oven method is the most convenient, but you can also grill the Texas Toast! (just be careful it cooks faster than you think!)
