Tex-Mex Turkey Burgers (Smokey Spicy Turkey Burgers with Cilantro Pesto & Smokey Spicy Mayo on Texas Toast)

Ingredients:
Cilantro Pesto
2-bunches cilantro , lower stems cut off
1/2 cup toasted chopped pecans
3oz.- manchego cheese,grated
1/4-1/3 cup- regular(not extra virgin)olive oil
Burgers
21/2 lbs- ground turkey
1Tbsp.- ancho chile powder
2tsp.- smoked paprika
1tsp.-garlic powder
1tsp.-onion powder
1tsp.-ground cumin
1/2 tsp. smoked sea salt
1/2tsp.- regular sea salt
21/2 Tbsp.- adobo sauce
Smokey Spicy Mayo
1cup- mayonnaise
1Tbsp.- adobo sauce
1/2 tsp.- ancho chile powder
1/tsp.- smoked paprika
1/2 tsp. -smoked sea salt
vegetable oil to brush grill
12oz. -cotija cheese,crumbles
12 slices- Texas Toast
Instructions:
Prepare charcoal grill with cover or pre-heat a gas grill to medium high.
Make pesto first . Start by placing pecans in a heavy fire proof skillet on the grill. Toast pecans 2-3 minutes tossing frequently. Remove and cool. Place cilantro, cooled pecans, and grated cheese in a food processor. Pulse until mixture is smooth. Start food processor again steadily pouring in oil. Pouring in just enough oil to pull the mixture together. Last add salt. Put pesto into a resealable container and refrigerate until ready to use.
Place ground turkey into a large mixing bowl. Next place spices into a small mixing bowl stir with a spoonjoy until well-blended. sprinkle spice mixture into turkey mixing by hand as you go. Next add in adobo sauce. be sure to wash your hands after this step so as not to accidently get the hot sauce in your eyes. cover and set aside until ready to shape and cook patties.
Now make the mayo sauce. Place mayo, spices, and adobo sauce into a small mixing bowl stir until well mixed cover and refrigerate until ready for use.
Shape turkey mixture into 6 large patties to fit the toast. Brush the grill with oil place patties on the grill Cook patties, turning every 2 minutes for a total of 4-6 minutes.Divide crumbled cotija cheese between the patties leave on grill an additional 1-11/2 minutes. remove burger to a plate until ready to assemble.
Place bread slices on grill toast both sides until golden brown. Remove Spread mayo on one side of each slice of toast. Place burger on one slice top with pesto and place second slice of toast on top. Enjoy!
