Texas BBQ Brisket Burgers

Ingredients

3 lbs beef brisket – trimmed and ground from the middle portion of the brisket. Do not use the thin or the thick end of the brisket.
1 lbs of trimmed bacon – grilled.
2 cups of bbq sauce – separated and warmed.
20 cloves of unpealed broken garlic.
1 to 2 bags of Onion Loaf Hamburger buns – toasted.
2 tbsp of dijon mustard
For Toppings:
2 large Texas 1015, 4166 or sweet walla walla onions.
2 Hot House or Beef Steak tomatoes – Sliced.
1 Cup of gherkins style pickes – sliced.
a number of slices of povolone, american or swiss cheese – depending on the guests taste.
1 bunch of crisp romaine lettuce.
Butter to toast buns.

 

Instructions

Method: 1. Slice onions into burger size parts. 2. Place the onions in whole slices in an ice water filled bowl. 3. Grind Brisket into hamburger grind adding 1 1/2 of the mustard to every 1.5 lbs of brisket. 4. Hand mix 1/2 cup of bbq sauce into the brisket. 5. On a large cutting board lay the meat out to an even thickness. 6. Take an old 1lb coffee can and remove the bottom out of the can with a can opener. Use the can as a cookie cutter to make hamburger patties. 7. Over a medium hot grill (1-2-3- Ouch) place strips of bacon and grill until lightly crispy. Remove from heat and set aside covered. 8. Breakup and place all the cloves of garlic directly on the hot coals. 9. Place the brisket patties on the grill. **The garlic will smoke a little on the coals. This is normal. The roasted garlic flavor will permeate into the meat. 10. Cook until desired doneness. 11. Top with two crisscross slices of bacon and cover with the desired cheese. 12. Baste cheese with a little barbeque sauce and close grill for 20 seconds. 13. Remove patties from heat. Cover and set aside. 14. Apply a small amount of butter to buns and toast for not more than 2 minutes on the hot grill. 15. Remove from heat and cover lightly with foil. Garnish with tomatoes, onions, pickles, bbq sauce and lettuce. Recommended side dishes: Grilled smoked garlic asparagus, home-style crispy potato wedges, Texas green beans or avocado cups. Drinks are on the house.
