Texas Mustard and Pepper Encrusted Burger

Caramelized Sweet Yellow Onions

1 Texas Yellow Onion
olive oil for brushing the onion


2 pounds ground chuck
¼ cup Worcestershire sauce
2 teaspoon yellow mustard
½ teaspoon salt
2 teaspoon course ground black pepper

olive oil for brushing the grill rack
2 French baguettes cut into 3 sections
olive oil for bushing the rolls

Lime Mayo

2 tablespoons Hellman’s low fat mayonnaiseour g
1 teaspoon fresh lime juice


Preparation Time: 30 minutes
Cooking Time: 20 minutes


Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To make the patties, place ground chuck in a large bowl, divide mixture into 6 equal portions and form patties.

In a separate bowl, mix Worcestershire sauce, yellow mustard, salt, and pepper. Brush these ingredients fully over all six patties and let set while grill heats.

Brush the grill rack with olive oil. Place the patties on the rack, cover and grill 4 – 5 minutes. After placing patties on the grill, slice onion into ¼ inch slices and brush each with olive oil and place on grill with patties. While patties cook on the first side, brush inside of each roll grouping with olive oil and set aside. Turn patties and continue to grill until cooked to preference, approximately 5 minutes for medium cooked burgers. Turn onions as well. As soon as patties are turned, place French bread on outer portion of the grill rack, open side down to slightly toast.

Remove toasted French bread from grill, cut into three sections and place each on a plate open. Place one burger on each bottom bread section and then place a slice of the caramelized onion on top of the burger.

Mix mayonnaise and lime juice and place scoop on each burger.
