1-2 jalapeno peppers thinly sliced (three if you like it hot) or 1-2 hot red peppers.
8 large shallots thinly sliced
12-18 large basil leaves
6 large eggs
3 tablespoons olive oil
Bun:
6 small Kaiser rolls
Instructions
In saute pan cook shallots, red pepper, yellow pepper, and jalapeno peppers or hot red peppers in 2 tablespoons of olive oil until soft, about 5-8 minutes.
Remove shallots and peppers from pan.
Add additional 1 tablespoon of oil to pan.
Fry 6 eggs in oil. for 1-2 minutes per side. Break yolk before turning eggs.
Mix ground turkey with soy sauce, fish sauce and crushed garlic.
Grill burgers: Place the turkey burgers on the grill and cook for 3-5 minutes. Flip and continue to cook, for 3-5 minutes more.
Assemble burger: place burger on bun, top with fried peppers and onions, top with one fried egg and 2- 3 basil leaves.
