Thai Chicken Burger with Sweet Chili Mayo

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.


2lbs.ground chicken
2 tsp.finely chopped fresh peeled ginger
5 whole water chestnuts,finely chopped
3 scallions chopped,white part only
1/4 tsp. salt
1/4 tsp. pepper
1/3 cup soy sauce
2 cups pretzel crumbs.Process fine.
6 iceburg lettuce leaves
6 ciabatta rolls
For Sauce:
1/4 cup mayonaise
2 tbls. sweet chile sauce
Mix together.



Mix chicken,ginger,water chestnuts, scallions,salt and pepper together just to blend. Form into 6 square patties (to fit rolls).Put soy sauce and pretzel crumbs in separate shallow plates.Dip patties into soy sauce on both sides, then into pretzel crumbs, coating completly. Lightly oil grill rack. Grill patties 6-7 minutes per side until cooked through.Remove from grill and toast rolls,cut side down. They toast very quickly. To asemble burgers, place 1 lettuce leaf on roll,place burger on top,then add 1 tbls. of mayo sauce to top of burger.
