Thai “Drunken” Burgers

This wine is bursting with crisp, refreshing fruit flavors like apple, pear, and melon, making you want to swing your legs off a dock at sunset.


Muay Thai Sauce

3/4 cup ounces hoisin sauce
1/4 cup oyster sauce
1/4 cup plum or plum duck sauce
1/8 cup Sriracha Hot Chili sauce (adjust up or down for more/less heat)


1 tablespoon butter
1 medium yellow onion diced
3-4 cloves garlic, minced

2 pounds ground chicken breast
1 cup finely crushed saltines or plain bread crumbs
1 egg beaten
8 ounces soft silken (or soft) tofu
2 tablespoons Sriracha Hot Chili sauce
1 cup fresh finely chopped basil
1/4 cup Muay Thai Sauce


1 tablespoon butter
1 tablespoon soy sauce
1 medium red bell pepper slivered
2 medium jalapenos seeded and slivered
6 cups green cabbage cut into strips
1/2 cup fresh basil finely chopped
1/4 cup Muay Thai Sauce


6 sesame seed Kaiser Buns, split


Prepare fire or gas grill to 300 degrees (medium-low).

To make the sauce, combine the hoisin, oyster, plum, and Sriracha sauces in a medium sized bowl. Cover and set aside in refrigerator.

To make the patties, begin by melting butter in a grill safe pan. Sauté the garlic and onions until onions are soft and translucent, approximately 7-8 minutes. Let cool. In a large bowl, combine the chicken, saltines, egg, tofu, Sriracha, basil, Muay Thai Sauce and sautéed onions. Mix thoroughly. Form into 6 patties and refrigerate until ready to grill (10-20 minutes for best results). Place patties on pre-heated 300 degree F grill for 10 minutes per side. Remove and cover with foil. While grill is still hot, place the buns cut sides down until lightly toasted

To make the slaw, begin by melting butter in a grill safe pan. Sauté the bell pepper, jalapenos and cabbage until cabbage is limp but still crunchy, approximately 4-5 minutes. Add the basil, soy sauce and Muay Thai Sauce and cook for 2 minutes more stirring constantly. Remove.

To assemble the burgers, spread a generous amount of Muay Thai Sauce on the bottom bun. Place a patty on each bun bottom and top with equal portions of the slaw. Add the bun tops and enjoy.
