The Australian Down Under Barbie Style Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Many years ago(in the 60’s) I moved my family to Sydney Australia on business. We lived there for 3 years and I remembered creating and cooking this recipe on the Barbie for them. They are coming for a visit to celebrate our 52nd wedding anniversary. I rewrote the recipe and will grill it for them. After we eat we will look at the pictures we took while down under. I know we will have a great time and a great meal. I did make it originally using ground lamb the difference in it and ground Chuck is minimal.

Ingredients:

1/2 cup Sutter Home Zinfandel

1/4 Cup Colavita Extra Virgin Olive oil, plus some for preparing the grill

2 pounds fresh ground 80 /20 Chuck

1 1/2 tablespoons salt, or to your personal taste

1 1/2 tablespoons pepper

1 1/2 tablespoons fresh minced garlic

Reynolds Parchment Paper

6 slices California Sharp Cheddar cheese

6 slices precooked bacon

Reynolds Wrap Foil For the Grill

3/4 cup butter at room temperature

6 fresh King’s Hawaiian Sweet Sandwich rolls

6 fresh lettuce leafs, burger size

6 NatureSweet Cherub tomatoes

6 1/4-inch sliced large red onion

2 ripe California Avocados, seeded, skins removed, and sliced

3/4 cup thin sliced Del Monte Pickled beets (an Australian burger tradition) optional

3/4 cup Mayo

1 1/2 tablespoons fresh mint leaves, minced

1 1/2 tablespoons mint jelly

Instructions:

Set out the ground Chuck to reach room temperature. Prepare the your Barbie (Aussie term for grill) with the olive oil and preheat to medium high.

Pour the Sutter Home Zinfandel in a large bowl with the Colavita Extra Virgin Olive Oil; add the salt, pepper, and garlic powder whisk together. Add he ground Chuck, using a large spoon blend together. Using Reynolds Parchment paper gently form 6 patties slightly larger than the rolls. Place on the Barbie (grill) and grill 5-7 minutes. Place a doubled sheet Of the Reynolds Foil for the grill and add the bacon. Turn the patties and bacon, add a slice of the California Cheddar cheese to the patties, and grill 3-4 minutes. Spread the insides of the rolls with the butter place on the Barbie (grill) buttered side down to toast to a light golden brown. Cook another 2 to 3 minutes or to your preferred doneness. Blend the mayo, mint leaves, and mint jelly together. Remove all from the Barbie. Spread the mint mayo on the toasted roll insides brake the bacon in half and place on the patties. Place the patties on the roll bottoms cheese side down (remember this is a “Down Under Burger”), add a lettuce leaf, 1 NatureSweet sliced Cherub tomato, onion slice, and the beets equally to each (if chosen).

Serve with Aussie and California pride and enjoy mates.
