The Best Chicken Burger

Pairs well with:

Pinot Grigio

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

1 lb. ground chicken
salt and black pepper
1 10 oz. package chopped frozen spinach
4 fresh basil leaves (rolled and chopped)
1/4 cup finely chopped red pepper
1/4 cup finely chopped sweet onion
1/2 cup Italian style breadcrumbs
1/2 cup grated Parmesan Reggiano cheese
1 teaspoon dijon mustard
6 semi-hard rolls (or kaiser rolls)split
extra virgin olive oil
provolone cheese (6 slices)
gourmet potato chips

In a large mixing bowl, salt and pepper the ground chicken. Add 1/2 of the spinach (5 oz.) and the fresh chopped basil to the ground chicken mixture. Add the red peppers and sweet onion to the mixture. Slowly add the breadcrumbs and parmesan cheese to the mixture. Add the teaspoon of dijon mustard to bind the mixture together. Use the patti press to form 5 burgers (or 6 thinner burgers) Drizzle the tops of the patties with extra virgin olive oil and place in a hot skillet. Cook 7-8 minutes on each side (for a total of 15 minutes) Add one slice of provolone cheese to the top of each patti and allow to melt (approximately 2 more minutes). Place each burger in a split kaiser roll and serve with gourmet chips. Enjoy!
