The Billy Burger Original

Pairs well with:

Get cozy and get pouring. Our Merlot is the wine for long weekends and lengthy chats.

1. 2.5 lbs 80/20 angus ground beef
2. Half pack ranch soup mix
3. One full pack of onion soup mix
4. One teaspoon Pot Latch Rub
5. 2 tablespoons Worchestershire Sauce
6. 2 Tablespoons Steak Seasoning
7. Shredded Old English Cheese
8. 12 Slices Apple cured Bacon
9. Bakery Fresh Kaiser Roll Plain
10. Fresh Iceburg Lettuce
11. Fresh Tomato Garlic and Chive Mayo
12. 4 tablespoons Mayo
13. 3 Cloves garlic
14. 1 tablespoon Fresh Chive

In a large bowl, mix ingredients #1 through #5 throughly. Push meat through hands and fingers so it is mixed well. Kinda of what your toddlers do with their greenbeans. Mold into 6 even balls. Roll throughly to avoid cracking. Like meatballs. Place balls into 1/2 pound burger press. Press very hard to pack in beef. Pack it in good! Place in Fridge for at least three hours to get a good form. In mean-time, place Mayo, garlic cloves, and chives in mini-food processor and grind up into a yummy spread. When ready to be the "Thrilla behind the Grilla", then pre-heat grill up to 600 degrees. Get it hot hot hot hot! I stress, hot hot hot, to seal in the juices. Brush on a good grilling oil onto the grates right before burgers go on. Place 12 strips of bacon on perferated grill pan..trick is to cook back not to crispy. Should be somewhat elastic. Place the burgers on the grill and allow to cook for around 5-7 minutes on one side with grill cover closed…do not open and peak. Peaking lowers the heat. And never, never, touch the burgers like you are some short order cook. Pushing on them will allow juices to drip. Flip to other side for 4-6 more minutes and add a sprinkle of Steak Seasoning on top..Also, pile of Old English Shredded Cheese. Flip bacon too. Close cover and do not peak. Open cover and turn down heat to lowest setting and toast Kaiser rolls on grill to get inside crispy, while trying to keep out. Keep cover open and place burgers on warming rack to get juices to get back into meat. Place Burger on bottom Toasted Kaiser Roll bun, with bacon, lettuce, and tomato on top…Lastly, put on the Garlic and Chive spread thick on top bun and close. MMMMMM, Enjoy with glass of good Merlot, or favorite beer.
