The Casablanca Burger

Pairs well with:


Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


3 tsp Turmeric
3 tsp Ground Cummin
3 tsp Crushed Garlic (reserve 1 tsp for yogurt topping)
2 tsp Paprika
2 tsp Cinnamon
1 tsp Ground Nutmeg
3 lbs Ground Chuck 80% lean
2 Large Red Peppers
2 cups Plain
1/3 cup Cucumber finely diced
3 whole Figs finely diced
1/2 medium Red Onion finely diced
1/4 cup Mint chopped very well
Salt and Pepper to taste
Oil for grill 8 Sesame Seed Hamburger Buns



Mix spices and 2 tsp of garlic into 3 lbs of ground chuck Form into 8 six ounce burger patties Place red peppers on medium hot grill about five minutes prior to grilling burgers, turn often Mix 2 cups yogurt with cucumber, 1 tsp of garlic that had been reserved, onion, figs, and mint Brush oil on a medium hot grill Place burgers on grill for 4-5 minutes per side Warm buns on top rack of grill while burgers cook Remove red peppers from grill with burgers and slice the peppers into half inch strips, top burgers with five or six strips Place burgers on bottom half of bun Slather a generous spoonful of yogurt topping on burger Place top bun on burger and enjoy
