The Double Down Burger

Ingredients

  • For the Burger:
  • 1 1/2 Pounds ground Angus beef
  • 1Poundmixed gourmet mushrooms
  • 2t Cajun rub
  • Salt & Pepper to taste
  • 1/8c chopped cilantro
  • 1/4c chopped parsley
  • 2T chopped dill
  • 2 eggs
  • 4t Worcestershire
  • 2t Hot Sauce ( I prefer Hot Louisiana)
  • 1/2 diced onion
  • 4 minced garlic cloves
  • Brioche Buns
  • Butter for spread
  • 2t minced garlic
  • For the Toppings:
  • 2 butter lettuce leaves per burger
  • 1 slice of pepper jack per burger
  • 1 slice of smoked provolone per burger
  • jalapeno bacon jam
  • Maple peppered bacon
  • Caramelized onions
  • Worcestershire braised cremini mushrooms
  • Spicy chipotle sauce
  • Dill pickle mustard

Instructions

  • Creation of the burger:
  • Mix all the burger ingredients by hand, form into regular size patties and let firm in fridge.
  • Sutter Home White Sangria Recipe:
  • In a large pitcher mix together 1 bottle of 750ml Pinot Grigio, 2 c of chopped berries & fruits (apples, strawberries, blueberries, raspberries), 3c apple juice, 2c lime flavored sparkling soda, 2c ice, and chill until ready to serve the burger.
  • Cooking the burger:
  • Cook burger patties in cast iron skillet with melted butter for 4min each side for Medium-Rare (perfect temp for a burger). While burgers are cooking, spread butter and minced garlic on split brioche buns and toast in a skillet for 45-60secs until golden brown, and set aside. During last minute of cooking the burgers, place a slice of smoked provolone then a slice of pepper jack cheese on top of the patties, cover skillet with a lid and steam with heat off for 1min. Remove and let sit for 1min before assembling burger.
  • Assembling burger:
  • Spread 2t dill pickle mustard on bottom bun, then place butter lettuce leafs on top of mustard. Place burger patty on top, then 2 pieces of bacon, a dollop of jalapeno bacon jam, 1 1/2T caramelized onions & 1 1/2T braised mushrooms. On top bun, spread 2t spicy chipotle sauce and place bun on top.
  • Serve this Double Down Burger with a nice iced glass of Sutter Home White Sangria as you welcome in the beginning of Summer!
