The Fruity-Licious Lip Smackin’ Burger

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

Avocado Mayo
1 ripe Haas avocado, mashed
2T. mayonnaise
1t. fresh lime juice
1/4t. salt
The Delish Burger patties
1 3/4lb. 73/27 ground chuck
1/4lb. ground pork
3T. Sweet and Spicy Caribbean Jerk seasoning
3t. salt 1T. Chipotle Pepper Sauce
1T. minced, jarred garlic
3T. Sutter Home White Merlot
6 1/2" seedless watermelon slices, each cut to size of patty
6 1/2" slices of fresh, peeled pineapple (pre-done, fresh whole peeled in grocery produce section)
Colavita Olive Oil, to spray rack
6 large Sesame hamburger buns
Colavita Olive oil, to spray on buns

 

Instructions

Light a 4 burner gas grill on HI. To make Avocado mayo, combine the avocado, mayo, lime juice and salt together in a bowl. Mix until throughly combined, cover with plastic wrap ON the surface of the mixture and set aside (refrigerate if possible). To make the patties, combine chuck, ground pork, Caribbean seasoning, salt, chipotle peper sauce, garlic and wine together in a large bowl. Mix lightly until well blended, and divide into 6 portions and patty out to fit buns. Cut slices of melon to fit the patties. Turn grill down to Medium HI, spray grill with Olive oil and gently set patties on grill. Turn only once, and cook to 160 degrees, or 10-12min depending on grill. After the flip of the burgers, place slices of watermelon and pineapple on grill. Spray the soft insides of the buns with olive oil, place on grill oil side down, as you get room (rotating the burgers off the grill as doneness is achieved)and toast lightly. Flip watermelon and pineapple when grill marks are nicely etched, pull when grill marks are on both sides. To assemble, place bun, toasted side up on table. Spread a generous amount of the avocado mayo on the crown of the bun. On the bun heel (bottom), place a slice of the grilled pineapple, followed by a patty, then a slice of grilled watermelon. Top with the bun crown and serve. Repeat for all 6 buns. Makes 6 burgers.
