The Green Bison

Zinfandel

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

I really enjoy Bison as a red meat but even with it being a leaner meat, it is still tender and juicy when cooked correctly

Ingredients:

3 lb ground bison
1/2 c chipotle peppers
3 tbl onion powder
3 tbl garlic powder
1/4 salt
1 tbl black pepper
3 tbl paprika
12 oz peper jack cheese
1 jumbo white onion
2 c AP flour
1 head ice berg lettuce
3 5 by 5 tomatoes
3 Avacados
6 onion kaiser rolls

Instructions:

puree chipotle peppers
mix bison, chipotle, onion powder, garlic powder, pepper, papricka and 1.5 oz salt.
mix and form 6 8 oz burger patties
slice pepper jack into 2 oz slices
juliene onions toss in flour and fry
season with remaining salt
slice tomatoes into 1/4 in slices
shred lettuce
slice avacado into 1/2 thick slices

Cook burger on standard house hold grill until medium
melt cheese on burger
toast buns on grill
burger shoudl be assembled:
bottom bun
lettuce
tomato
patty with cheese
avacado
fried onions
top bun
