The Gutenburger

Ingredients

  • For the Patties:
  • 2Pounds bratwurst
  • For the Beer Cheese Sauce:
  • 4 Tablespoon butter
  • 1/2 onion, finely diced
  • 4 Tablespoon flour
  • 2 Cups pale ale
  • 1 1/2 Cups heavy cream
  • 1 garlic clove, minced
  • 12 oz cheddar cheese
  • 5 slices muenster cheese
  • For the Potato Pancakes:
  • 2.5 Pounds potatoes, peeled and grated
  • 1 onion, grated
  • 2 eggs
  • 1/2 Cup flour
  • 1 Teaspoon salt
  • 1 Teaspoon baking powder
  • Canola Oil
  • For Assembly
  • Stone ground mustard
  • 6 slices Muenster cheese
  • 6 Pretzel Buns
  • Sauerkraut
  • Half sour pickles

Instructions

  • For the Patties:
  • Remove bratwurst from casings and form into patties.
  • Grill on medium-high heat until internal temp is 155F, about 8 min each side. Add muenster cheese the last 2 minutes of cooking.
  • For the Beer Cheese:
  • In a medium saucepan, melt butter. Add onions and saute until translucent. Add flour and cook until a blonde roux forms.
  • Whisk in beer and bring to a boil. Reduce and simmer until beer has reduced to about half.
  • Add heavy cream and garlic. Bring to a boil and reduce heat. Simmer for 5 minutes.
  • Remove from heat and add cheese. Whisk until smooth. Season with salt to taste.
  • For the Potato Pancakes:
  • Place shredded potatoes on a paper towel or cheesecloth and squeeze out as much water as possible.
  • Combine eggs, flour, salt and baking powder. Add potato and grated onion. Mix until well combined.
  • Heat 1/4 inch canola oil in a large saute pan.
  • When oil is hot, drop spoonfuls of potato mixture and flatten. Cook until both sides are golden brown.
  • Drain on paper towel.
  • For Assembly
  • Cut pretzel bun in half. Warm in toaster oven or grill.
  • Spread mustard on bottom bun followed by patty, potato pancake, cheese sauce, sauerkraut, and pickles.
