Ingredients
- Beef patties
- 1 1/2 Pounds ground chuck
- 2 Teaspoons kosher salt
- 1 teaspoon ground black pepper
- 3 tablespoons Worcestershire sauce
- Olive oil (for brushing on grill)
- Caramelized onions
- 2 large yellow onions
- 1 1/2 tablespoons butter
- 1 1/2 tablespoons olive oil
- 2 Teaspoons kosher salt
- Caramelized mushrooms
- 8 ounces white button mushrooms (cleaned, sliced about 1/4 inch thick)
- 1 1/2 tablespoons butter
- 1 1/2 tablespoons olive oil
- 1 teaspoon salt
- Balsamic-marinated tomatoes
- 6 slices tomatoes (1/4 inch thick from 3 large tomatoes)
- 1/2 Cup balsamic vinegar
- 1/2 Cup olive oil
- 2 Teaspoons dried basil
- Caramelized bacon
- 6 slices bacon (each slice cut in half)
- 6 tablespoons brown sugar
- 1/2 Cup mayonnaise
- 1/2 Cup stone-ground mustard
- 1 bunch fresh arugula
- 4 ounces goat cheese
- 6 onion hamburger buns
Instructions
- Preheat gas grill or prepare coals for charcoal grill to medium-high heat.
- While grill is preheating, prepare the meat for the patties.
- In a large bowl, combine ground chuck, salt, pepper, and Worcestershire sauce.
- When cooking the onions, mushrooms, and bacon, it is much easier to cook them in disposable aluminum pans on the grill.
- This makes for easier clean up.
- Slice ends and roots off of both onions.
- Peel dirty and bad layers off of onions.
- Slice onions into 1/4 inch thick slices, then cut slices in half (making half circles).
- Add butter and olive oil to cake-size aluminum pan and put pan on the grill.
- Once the butter has melted, add the onions, stirring occasionally.
- Watch the onions if things get too hot.
- We do not want the onions to burn at the start.
- After ten minutes of cooking, add the salt.
- Cook the onions until they turn a golden brown color.
- Remove pan from grill and cover with aluminum foil to keep warm.
- Total time should be about twenty minutes.
- To cook the mushrooms, clean whole mushrooms (if not sliced already) by rubbing them with a damp cloth or paper towel.
- Cut off woody ends of mushrooms.
- Slice mushrooms about 1/4 inch thick.
- Add butter and olive oil to square disposable aluminum pan.
- Put pan on grill.
- When butter is melted, add mushrooms, stirring occasionally.
- Add salt five minutes after cooking has started.
- Cook mushrooms until they have turned a deep brown color, but not burnt.
- The mushrooms will still have moisture in them.
- Remove pan from grill and cover with aluminum foil.
- Cooking time around ten minutes.
- Slice tomatoes 1/4 inch thick.
- Add balsamic vinegar, olive oil, and dried basil to large glass dish, then stir together.
- Add tomato slices to mixture to marinate.
- Flip each tomato slice to make sure basil is on both sides.
- Cut bacon slices in half, place in disposable aluminum grill pan and place on grill.
- After a couple minutes once the bacon starts to cook, sprinkle half of the brown sugar onto the bacon.
- Watch the heat and make sure the bacon or brown sugar does not burn!
- After five minutes, flip bacon and sprinkle remaining brown sugar on bacon.
- Cook another four minutes, then flip bacon one more time.
- Cook for two more minutes.
- Remove pan from grill and cover with aluminum foil.
- The bacon should be flexible and not crispy.
- Once you start cooking the bacon, brush the grill with olive oil.
- Form six hamburger patties from the meat mixture and put on grill.
- Cook about five minutes and flip each patty.
- Cook another four minutes.
- Place open sides of buns on grill to toast for one minute.
- This will cook burgers to medium-well.
- Turn off grill and remove burgers and buns.
- Mix mayonnaise and stone ground mustard in small bowl.
- Time to put the burgers together.
- Place two large arugula leaves on each bottom bun.
- Remove tomato slices from marinade, shaking off excess marinade, then place one tomato slice on each layer of arugula.
- Place hamburger on top of each tomato.
- Place layer of caramelized mushrooms on each burger, approximately 6-8 mushroom slices.
- Divide goat cheese into six equal portions.
- Crumble each portion and place on mushrooms.
- Then, place 1/4 Cup of caramelized onions on each burger.
- This will cause the goat cheese to start to melt.
- Place two slices of caramelized bacon on top of onions.
- Spread two tablespoons of mayonnaise-mustard mixture on open side of bun top and place on each burger.
- Cut in half if desired, then serve.
- Makes six burgers.
