The Madison Burger

2lbs of ground chicken
1 large egss
1/3 cup of Fresh Rosemary chopped
1/2 tsp of Fresh Thyme Chopped
2 Shallots finely chopped
2 teaspoons of coarsely ground black pepper
2 teaspoons of kosher salt
4 ouonces of goat cheese
1/3 cup of good Olive Oil(Colivata)
1 bunch of Arugula
1 loaf of Brioche Bread
3/4 cup of good Mayonnaise
1 1/2 tablespoons of Dijon Mustard
1 teaspoon of chopped Rosemary
2 tablespoons of sour cream
1 pinch of salt



Place Ground Chicken and the next six ingredients in a large bowl together and mix well. Once mixed, make the patties with your hands into six burgers. Make an indentation in the middle of the burger and add 1 teaspoon of goat cheese in the center covering the cheese with your meat and make a pattie. Brush burger with olive oil, salt and pepper evenly. Before grilling, brush olive oil onto grill and place burgers on the grill for 5 minutes each side with lid down or until done. While the burgers are cooking, Make the mayonnaise for burgers. Whisk together the mayonnaise,mustard,rosemary,sour cream,pinch of salt in small bowl. When the chicken and bread are finished cooking, spread bread with mayonnaise mixture, place the Arugula onto the bread top it off with burger. Serve at room Temperature.
