The MAS Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


1-2 tablespoons olive oil
1/2 red onion, chopped
1/2 lb. sliced mushrooms
1 lb. ground beef
1 tblp. fresh thyme, chopped
1 tblsp. fresh parsley, chopped
1 egg, beaten
1/2 cup fresh bread crumbs
1/4 lb. swiss cheese, cut into small pieces
4 Brioche buns
1/2 cup creamy dijon mustard
2-3 tblsp heavy cream
red leaf lettuce



Heat olive oil in saute pan. Add onions and mushrooms. Saute until golden brown, sprinkling with salt, sugar and pepper right before finishing. Set aside to cool slightly. In a bowl, mix together beef, thyme, parsley, egg, bread crumbs and sprinkle with salt and pepper. Form into four patties with a well in the middle. In each patty spoon a 1/2 of the mushroom/onion mixture and 1/2 of the swiss cheese. Form the burger around the mixture, closing at the top. Grill until desired doneness. Warm buns on heated grill. Mix mustard with heavy cream until thick and creamy. Sprinkle with salt and pepper. On each half of each of the buns, spread with mustard mixture. Add, burger, top with a lettuce leaf. ENJOY!
