The Muffaletta Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 pounds of ground beef
6 thin slices of mortadella
6 thin slices of salami
6 thin slices of cappocolo ham
6 thin slices of mozzarella cheese
6 think slices of provolone cheese
1 cup of large pimiento stuffed olives (sliced)
1 cup of brine cured black olives (sliced)
2 cups of sliced roasted red peppers
1 tablespoon of finely minced garlic
2 tablespoons of finely chopped shallot
1 teaspoon of pepper
1 loaf of italian bread (unsliced)
Dressing
1 cup mayonnaise
1/2 small onion
2 tablespoons red wine vinegar
1 tablespoon white sugar
1/2 teaspoon of oregano
1/2 teaspoon of basil
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper

 

Instructions

Preheat grill for medium high heat.
Place beef in a bowl add sliced olives, shallots, garlic, pepper and mix together, but do not over mix.
Separate beef into 6 equal portion and place on the grill, cook about 8 minutes per side, when burgers are almost done place the slices of mozzarella and provolone on each burger cook until cheese is melted about 2 minutes.
While burgers are cooking, In a blender or food processor, combine mayonnaise, onion, vinegar, and sugar. Season with basil, oregano, garlic powder, salt, and pepper. Blend until smooth. Cut bread into 12 1/2 slices and place on the grill and toast on both sides.
Slather italian dressing on each slice of bread place burger on 1 slice of bread and top burger with 1 slice each of the mortadella, salami, ham. Then top with roasted red pepper then top with other slice of bread. Enjoy!
