Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


3 tablespoon plus 6 teaspoons butter
1 pound wild mushrooms (such as oyster, crimini and stemmed shiitake), coarsely chopped
1 onion, finely chopped
2 tablespoons dry Sherry
15 large eggs
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup grated Cheddar cheese
1 pound ground chuck & 1 pound ground sirloin
1/4 cup Sutter Home California Zinfandel
3 tablespoons minced fresh oregano, thyme, and basil
1 1/2 teaspoons spicy seasoned salt & 1 1/2 teaspoons pepper
6 (4 1/2-inch) soft Kaiser rolls, split
6 romaine lettuce leaves
6 (1/4-inch-thick) large tomato slices
6 slices of American cheese (as desired)



Omelettes Melt 3 tablespoons butter in heavy large skillet over high heat. Add mushrooms and onion; saute until golden brown, about 15 minutes. Mix in Sherry; cook 1 minute. Remove from heat. Season to taste with salt and pepper. Set aside Whisk eggs, salt and pepper in large bowl to blend. Stir in cheese, mushrooms and onions. Melt 1 teaspoon butter in 7-inch nonstick omelette pan over medium-low heat. Pour generous 1/2 cup egg mixture into pan and cook until almost set, tilting pan and lifting egg mixture with rubber spatula to allow uncooked portion to run underneath, about 3 minutes, forming 4 1/2 circles to fit the kaiser rolls. Repeat with remaining butter, egg mixture, forming a total of 6 omelettes. Patties To make the patties, combine the chuck, sirloin, onion, Zinfandel, herbs, pepper, and seasoned salt in a large bowl. Mix well, while carefully handling the meat as little as possible to avoid compacting it. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. Place the rolls, cut side down, on the outer edges of the grill rack to toast lightly. To assemble the burgers, On each roll bottom, place a lettuce leaf, a tomato slice, a patty, an omelette and a slice of American cheese if preferred. Add the roll tops and serve. Makes 6 burgers
