The Oyster Burger

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.


1 c. Best Foods Mayonnaise
3 T. DaVinci Sun Dried tomato Pesto in oil
1/2c. finely chopped sweet white onion
2 t. crumbled dried cilantro
1 t . fresh lemon juice
1/8t . McIlhenny Co. Tabasco hot pepper sauce

2lbs. choice ground sirloin steak
2/3c. chopped smoked cocktail oysters 2 (3 ounce cans)
1/2c. finely chopped sweet white onions
3T. Panko dry bread crumbs
2 T. Lee Kum Kee oyster sauce
1 T. Shirakiku Sesame oil
1 t. Wright’s Hickory liquid Smoke
1 t. Salt
1 t. Fresh ground pepper
1 t. Tabasco hot pepper sauce

1/2 c. Oyster sauce to glaze burgers when grilling
1/2 c. peanut oil for brushing on cut side of buns and on grill
6 large Onion rolls or buns

6 large red curly lettuce leaves slightly larger than buns
4 whole smoked cocktail oysters for each burger (1 can)
3 long thin slices of avocado for each burger
1 bunch radish sprouts with white stems and roots cut off
1 cherry tomato for each burger
1/2 fresh lemon to squeeze over avocado


Preheat grill to medium high heat.

To make Aioli, mix together mayonnaise, pesto, onions, cilantro, lemon juice, and Tabasco. Keep cool.

To make burgers, lightly combine ground sirloin, chopped oysters, onions, oyster sauce, sesame oil, liquid smoke, salt, pepper, tabasco and bread crumbs. Form 6 patties to fit buns. Cover and sit aside.

To prepare garnish for burgers, tear lettuce leaves, slice avocado and lightly drizzle with lemon juice , cut roots and stems from radish sprouts and count out 4 oysters and one cherry tomato to top each burger, set aside.

To cook burgers brush grill rack with oil. Place burgers on rack and cook about 5 minutes a side.Turn once, brush cooked side of burger with oyster sauce. Brush cut side of buns with oil and place on grill. Toast lightly 2 to 3 minutes before removing burgers from grill. Burgers will continue to cook after taking off heat. They should be just cooked through.

To assemble burgers, place lettuce on bottom bun, add a generous portion of the Aioli mixture on top of lettuce, then the burger, avocado, a table spoon of Aioli on top of avocado,sprinkle with radish sprouts, Put a cherry tomato in center of oyster pin wheel. Stack top bun on side of burger to display the pin wheel.
