The Tao of Seamus

2 tablespoons sesame oil
1 medium finely diced onion
2 cloves garlic, minced
2 tablespoons finely diced green chile pepper (preferably a mild to moderate fushimi)
2 tablespoons finely diced red masuto chile pepper
1 tablespoon fresh ginger, grated
1 lb. ground sirloin, with a little bit of fat if you can get it. 
Dash of fish sauce
Dash of soy sauce
1/4 cup hoisin sauce
Salt and black papper
Dash of Chinese Five Spice
4 Sesame buns
Pickled ginger (as condiment)



Heat oil in saute pan. Saute onion with garlic, chiles and minced ginger, until onion is translucent. Let cool slightly. Add mixture to meat and mix thoroughly with hands. Add fish sauce, soy sauce and hoisin sauce to mixture; use hands to blend well. Season with salt, black pepper, and Chinese Five Spice; use hands to blend. Form into four patties, and refrigerate overnight. Grill as usual. Serve on grilled sesame buns garnished with pickled ginger. Serves four
