The Ultimate Gourmet Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 shallots, minced
1 clove garlic, minced
2 Tbs Colavita EV Olive Oil
1 lb. Cremini mushrooms, cleaned and sliced.
2 lbs. 85% lean ground beef
2 Tbs. steak sauce
1/2 cup crumbled blue cheese
Salt and pepper to taste

 

Instructions

Heat olive oil in large, heavy bottom skillet, add shallots and saute 1-2 minutes over med/high heat. Add garlic and continue to saute. Remove shallots and garlic from pan with slotted spoon onto a small dish. Add mushrooms to pan and saute until tender, season with salt and pepper. Add shallots/garlic back to pan and turn heat down to low. Pour in wine and continue to cook until wine is reduced by half. Keep on low/warm setting until burgers are done. For burgers: Place meat and steak sauce, along with salt/pepper to taste in a large bowl. With your hands, gently incorporate steak sauce through meat. Shape meat into 8 1/4 lb. patties and place on a platter. Use a large cast iron skillet seasoned with salt over med/high heat. Once pan is hot, add burgers and cook until desired doneness. As soon as burgers are done, top with crumbled blue cheese, place on your favorite bun/roll and top with shallot/mushroom mixture… Great by themselves, they don't need any condiments, but shredded lettuce and Grey Poupon mustard are always good.
