Ingredients

Patties:
2.25 pounds ground chuck
½ cup apple juice
1 Tbsp. coarse ground black pepper
1 tsp. coarse sea salt
3 cloves garlic, chopped
6 slices asadero cheese
Vegetable oil, for brushing on the grill rack
6 pieces thick-sliced bacon
6 pieces cured, cooked extra lean ham – approx 1/8” thick
6 slices mild cheddar cheese
6 whole wheat bakery buns
6 Tbsp. Mayonesa (Mayonnaise with Lime Juice added)
6 Fire roasted sweet red bell peppers (in a jar)
6 ripe tomato slices
6 thin slices red onion
12 slices ripe avocado
30 slices pickled jalapeños

 

Instructions

• Prepare a medium-hot fire in a charcoal grill • To make the patties, combine the ground chuck with the apple juice, black pepper, sea salt, and chopped garlic. Mix well, handling the meat as little as possible to avoid compacting it. Divide the mixture into 12 equal portions, then form into patties. Place a slice of asadero cheese on 6 of the patties. Place the other 6 patties on top of the cheese and pinch the edges together to form 6 cheese-stuffed patties. • When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack and cook, turning once, until done – about 6-8 minutes on each side. • Meanwhile, cook the bacon slices directly on the grill rack – about 3 minutes per side. Then place the ham slices directly on the grill rack for about 1 minute per side – just enough to heat through and leave some nice grill marks on the slices. • During the final moments of grilling the patties, place a slice of mild cheddar cheese on each patty. • When the patties, bacon, and ham are cooked, set them aside to a cooler part of the grill to keep warm. • Separate the buns, then place the halves, cut side down, on the grill rack and toast lightly. • To assemble the burgers, spread Mayonesa on the cut sides of each bun half (one tablespoon per burger). On the bottom half of each bun, place a patty, ham, bacon, roasted red pepper, tomato slice, red onion slice, 2 slices of avocado, and 5 slices pickled jalapeño. Add the bun tops and serve. Makes 6 burgers.
