1 lb ground beef
1/2 lb hot italian sausage
salt and pepper
1 diced small red onion
1 6oz container blue cheese crumbles
1cup shredded smoked gouda
1/4 cup mild chedder
1/4 cup chopped cilantro
1 clove garlic chopped
1 jalapeno diced with seeds
salt and pepper to taste
1can chipolte peppers in adobe sauce
1 1/2 cup mayo

combine the ground beef, italian sausage and red onino in a bowl stainless steel pref. Add salt and pepper to taste. Set aside an let come to room temp. Next combine all stuffing ingredients. mix well with hands untill all ingredients are well combined. This may also sit out until ready to use. For the topping in a blender combine the can of chipolte sauce and all with the mayo and a squeeze of lime salt and pepper to taste until a sauce is formed. Form one patty add a tbs of filling on the top and form the burger around the filling making sure the filling is compleatly covered. While the burgers are cooking warm the tortillas.
