The Uncorked Merlot Burger

1/8 cup Sutter Home Merlot wine
1 slice of medium-sized Vidalia onion
1/4 cup washed, fresh spinach with stems removed
1/3 lb. ground beef 85% lean
1/2 teaspoon freshly crushed garlic
1/16 teaspoon Sea salt
1/16 teaspoon black pepper
1/8 cup juice of Vidalia onion
1/4 cup bleu cheese chunks
1 hamburger bun, split and toasted



For topping, in a small skillet, combine Sutter Home Merlot wine, slice of Vidalia onion and spinach. Saute for 4-6 minutes or until liquid is consumed. Remove from heat, set aside. In a small bowl, combine ground beef, garlic, Sea salt, black pepper and onion juice (puree onion in food processor to obtain juice). Shape meat mixture into a 1/4 inch thick patty. Grill meat patty on a rack for 14-18 minutes or until meat is done (160 degree F), turning once halfway through grilling. To toast the bun, place it on the grill rack for 1-2 minutes while the burger finishes grilling. Place blue cheese chunks on top of meat patty, 1 minute before burger finishes grilling. Assemble the Uncorked Merlot Burger by placing the meat patty on the bottom half of the bun; add the topping and the top of the bun.
