Triple M Burger (Mushroom, Mozzarella & Merlot)

Ingredients

  • 3 Pounds fresh ground sirloin
  • 1/4 Cup Worcestershire sauce
  • 2 Teaspoons coarse ground pepper
  • 1 Teaspoons salt
  • 6 Slices fresh buffalo mozzarella 3/8″ thick (or store bought mozzarella)
  • 1/4 Cup olive oil
  • 1/4 Cup butter + 4 Tablespoons
  • 1 Medium vidalia onion, sliced thin
  • 1 Pound cremini mushrooms sliced
  • 3 crushed/minced cloves of garlic
  • 1/4 Cup Merlot
  • 2 Tablespoons fresh chopped basil
  • 12 Slices of a large ripe tomato, cut thin
  • 12 Large leaves of butter lettuce
  • 6 Ciabatta buns

Instructions

  • Patties:
  • 1. Divide beef into 6 equal portions and without overworking form into 5 inch patties
  • 2. Drizzle half of the Worcestershire sauce equally over the patties and flip patties
  • 3. Sprinkle 1 Teaspoon of salt and 1 Teaspoon of pepper eaqually onto patties
  • 4. Cover burgers and set aside at room temperature for 20-30 minutes prior to grilling
  • Mushrooms:
  • 1. Into a preheated medium-high skillet add the oil, butter, onions and mushrooms.
  • Saute/stir for 5 min
  • 2. Add remaining Worcestershire sauce, garlic, Merlot and remaining Teaspoon of pepper lower heat
  • 3. Allow liquids to reduce then cover and keep warm for burger assembly.
  • Assembly:
  • 1. Prepare a gas grill by preheating to high for 5+ minutes
  • 2. Lower grill to medium/high and wipe with olive oil
  • 3. Place 6 burgers on the grill for 5 minutes on first side
  • 4. Flip burgers, divide and spread equal portions of sauteed mushrooms on burgers
  • 5. Place cheese slices over the mushrooms
  • 6. Cover grill, turn to medium and finish cooking for 5-7 minutes for medium rare (just past redish)
  • 7. Remove burgers and loosely cover while preparing burger assembly
  • 8. Melt remaining 4 tablespoons of butter and brush insides of Ciabatta buns and grill for 1-2 minutes
  • 9. Plate buns, place lettuce onto bottom bun, then burger and sprinkle with chopped basil
  • 10. Top burgers with 2 tomato slices and cover with top bun to serve
