You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.


Patties makes 6
2 lbs ground chicken
1 Tablespoon whole caraway seed
1 Tablespoon dry marjoram
1 Tablespoon Kosher salt
1 Tablespoon olive oil
2 Tablespoon ice water
1/2 Tablespoon white pepper
1/4 Tablespoon allspice
1/2 cup mayo
1/2 cup seedless cucumber diced
1/4 cup flat leaf parsley
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons lemon juice zest from one lime and one lemon
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon coriander
1/4 teaspoon cumin



Make sauce first by placing diced cucumber and parsley in a food processor. Blend until smooth. Add remaining sauce ingredients and blend until well incorporated . Place in refrigerator until use. This can be made a day ahead of time too. To make the patties, place ground chicken in a cold large bowl. Add all the dry spices and mix well. the key to a good mix is to watch the caraway seed, it should be evenly distributed throughout. Now add the wet ingredients and mix thoroughly. Form patties and place on plastic wrap and refrigerate For at least one hour. Heat grill to Medium/High. When grill is ready place patties on and cook to a minimum of 165 degrees. Before serving top cooked patty with baby spinach, slice of ripe tomatoe, slice Baby Swiss cheese and suace.
