Tropical Island Turkey Burgers

Ingredients

1 ½ pounds ground turkey
1 can sliced pineapple in its juice/syrup
½ small white onion, finely diced
2 Tablespoons Jerk Seasoning
¼ teaspoon salt
¼ teaspoon black pepper
1 ½ Tablespoons + 1 Tablespoon
Teriyaki sauce
2 Tablespoons Extra Virgin Olive Oil
1 cup vanilla yogurt (plain may be substituted)
1 teaspoon Cream of Coconut Dash of Rum* optional
Hamburger buns

 

Instructions

Preheat outdoor grill pan for medium heat and lightly oil the grate. In a small bowl, combine pineapple slices and 1 Tablespoon Teriyaki sauce. Take 2 slices of pineapple and chop. Take 1 slice of pineapple and 1teaspoon juice and place in serving bowl for sauce. (Recipe follows) In a large bowl, combine ground turkey, chopped pineapple, onion, Jerk seasoning, salt, pepper and Teriyaki sauce. Gently combine all of the ingredients and pat out to make 6 burgers. Drizzle extra virgin olive oil over each burger, and place on grill. Cook for 6 to 7 minutes on each side, or until done. Do not press down on burgers, you want the juices to remain inside. Transfer to a plate and let burgers rest for 2 minutes before serving. Spread Piña Colada sauce on buns. Place burgers on buns, and serve with garnishments of your choice. Piña Colada Sauce In a small serving bowl, combine yogurt, 1 pineapple slice finely chopped, pineapple juice, cream of coconut and dash of rum. Stir to combine.
