Tropical Tandoori Burger

Ingredients

TROPICAL FRUIT, TOASTED SESAME SALSA
2 tablespoons coconut milk
2 tablespoons extra virgin olive oil
1 lime, juiced
1/2 teaspoon salt
1/4 teaspoon pepper
pinch of red pepper
2 mangos, diced
1/2 cup red onion, diced finely
1/4 cup cilantro, chopped
2 teaspoons sesame seeds, toasted
SPICED CHICKEN PATTIES
2 teaspoons ground tumeric
1-1/2 teaspoons ground ginger
1-1/2 teaspoon ground cumin
1-1/2 teaspoon ground allspice
1-1/2 teaspoon salt
1 teaspoon ground coriander
3/4 teaspoon pepper
2 pounds ground chicken
2 tablespoons coconut milk
3/4 cup onion, grated
3 teaspoons garlic, minced
6 10-12” flour tortillas

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

Prepare the salsa: Combine the coconut milk, olive oil, lime juice, salt, pepper and red pepper. Add the mango, red onion, cilantro and sesame seeds. Set aside to marinate.

Begin to prepare the patties by first combining the dry spices (so they’ll incorporate evenly in the meat mixture). Combine the turmeric, ginger, cumin, allspice, salt, coriander and pepper. In a large bowl, add to the chicken the dry spice mixture, coconut milk, onion and garlic. Lightly combine all ingredients to incorporate evenly without over handling. Evenly shape the chicken mixture into 6 equal rectangular patties (about 4 inches by 2 inches and about 3/4 to 1 inch thick. (This shape will fit well into the tortilla.)

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, about 7 minutes on each side to cook through (or until internal temperature reaches 165° degrees Fahrenheit). Towards the end of cooking time, warm each tortilla for about a minute or two on the cooler edges of the rack to warm and soften. Wrap in a clean towel or foil to keep warm until ready to assemble burgers.

To assemble the burgers, place each patty in the center of a warmed tortilla. Top with a portion of the salsa. Bring up the bottom of the tortilla toward the center of the burger. Fold in the left and right sides of the tortilla and turn over and serve on the plate.
