Turkey Bruschetta Burger with gorgonzola, grilled portabella, and red bell pepper

Ingredients

Bruschetta
5 plum tomatoes
1 cup fresh chopped basil
4 cloves garlic minced
4 tablespoons olive oil
3 tablespoons balsalmic vinegar
1/2 teaspoon salt
1/4 teasppon pepper
6 portabella mushrooms
3 red bell peppers halved
olive oil
Turkey Burger
2 lbs fresh ground turkey
3 tablespoons fresh chopped basil
3 tablespoons fresh chopped parsley
4 cloves garlic minced
2 teaspoons salt
1 tsp pepper
3 tablespoons olive oil
6 to 8 oz package hard gorgonzola cheese about 12 small slices
6 onion rolls
vegetable oil for greasing grill

 

Instructions

For the bruschetta begin by chopping tomatoes in a food processor and place in a bowl. Put basil in food processor, chop, and place in the same bowl. Mince the garlic and place in bowl. Add the olive oil, balsalmic vinegar, salt, and pepper. Mix and set aside. To prepare the portabella mushrooms and the red bell peppers coat in olive oil and set aside. To make the patties start with ground turkey in a large bowl. Chop the basil in the food processor and place in bowl. Chop the parsley and place in the bowl. Mince the garlic and add to the bowl along with the salt, pepper, and olive oil. Heat grill on high. Place the portabellas top down on hot rack. At the same time place the red bell peppers outer side down on rack. Close the lid and allow to cook for 5 minutes. Flip the portabellas and the peppers. The portabellas will cook for another 3-5 minutes or until they are juicy all over. The peppers will cook for another 5-8 minutes or until they are tender throughout. Remove from heat and set aside. Grease the grill rack. Place the patties on the hot, greased grill rack, close the lid and cook for 5 minutes. Flip the patties and cook for another 5 minutes lid closed. Insert a meat thermometer and the patties are done when the temperature reads 165 degrees. About 3 minutes before removing patties slice gorgonzola cheese and place 2 pieces on top the patties and close the lid. Cut the rolls in half and place on grill for 1 minutes to warm. Remove patties and rolls to assemble. To assemble place patty with cheese on the bottom half of the roll. Add a portabella mushroom on top the cheese. If needed, trim the grilled pepper to fit and place on top the portabella. Take a few heaping spoonfuls of bruschetta and place on the grilled pepper. Complete with the top half of the roll. Makes 6 burgers
