Turkey Burgers with Blue Cheese and Glazed Vidalia Onions

I was inspired to create this recipe with a touch of sweet and savory in every bite. That’s why I combined the sweetness of vidalia onions, balsamic vinegar, honey and cilantro with the savory taste of blue cheese, paprika, arugula and spinach.

Ingredients:

3/4 cup blue cheese, crumbled

1/2 cup Greek plain yogurt

2 Tbsp. fresh thyme, chopped

1/6 tsp. paprika

1 1/2 lbs. ground turkey

1/2 tsp. sea salt

1/4 tsp. black pepper

1/2 tsp. olive oil

1 large vidalia onion, thinly sliced

3 tsp. balsamic vinegar

2 Tbsp. honey

1 tsp. lime juice

1/2 tsp. freshly grated lime zest

6 whole grain buns, sliced and toasted

1 cup arugula

1 cup baby spinach

1/4 cup fresh cilantro, chopped

Instructions:

Preheat grill to medium-high.

Combine blue cheese, yogurt, thyme and paprika in a bowl; mix well to combine.

Divide ground turkey into 6 burgers. Sprinkle with sea salt and pepper. Brush oil onto both sides of sliced onions.

Place burgers onto hot grill; cook for 4 minutes on each side or until fully cooked.

Remove burgers from grill; set aside.

Place onions in a bowl with vinegar, honey, lime juice and zest; toss to combine. Place onions on the grill; grill for 6-7 minutes or until crispy.

Spread buns with blue cheese mixture. Then, add arugula and baby spinach, then cilantro, a burger, an onion slice and the top bun.
