Turkey Burgers with Watermelon Salsa

Ingredients

3 cups seedless watermelon cubes
1 jalapeno pepper
1 bunch cilantro
2.5 pounds ground turkey
1 tablespoon freshly ground pepper (multi color)
1.5 teaspoon sea salt
1 teaspoon cumin
Olive oil
6 pieces ciabatta bread cut into buns
6 romaine leaves

 

Instructions

Salsa: Finely dice the seedless watermelon and place in large glass bowl. Wearing gloves, finely dice the jalapeno pepper and add to the bowl. Coursely chop the cilantro and toss with the watermelon and pepper. Refrigerate until ready to use. Burgers: In another large bowl, place the turkey. Add the ground pepper, salt and cumin. Lightly stir until blended. Prepare the grill by oiling the grate and heating to medium hot. Approximately 45 minutes before serving time, shape the burger into 6 patties. Place each patty onto the hot grill. Turn after 5 minutes. Cook until inside temperature reaches 165 degrees on an instant read meat thermometer. wrap in foil until ready to use. Brush the large cut sides of each piece of bread with olive oil and lightly grill (2 minutes per side) until golden brown. These will serve as the buns. Assembling: Assemble burgers by placing a romaine leaf on the bottom half of each bun. Add half cup of salsa to each leaf. Add the hot burger patty. Top with the remaining bun piece. Serve immediately.
