1. Combine Turkey, Paprika, Cumin, Chili Powder, Salt, Olive Oil, and Cayenne in a bowl.
2. Dice the jalapeno and Red Onion and add to bowl of turkey.
3. Combine ingredients in bowl with clean hands until well combined.
4. Arrange into patty form. Flatten them out until they are around 5 inches in diameter and create a divot in the middle of each patty with your hands.
5. Heat a well greased grill on medium heat and add patties.
6. Let patties cook for 3-4 minutes and then flip them to cook for an additional 3-4 minutes. Turkey should be cooked until it has an internal temperature of 165 degrees Fahrenheit.
7. Add Pepper Jack Cheese slices during the last minute of cooking on the grill until the cheese has melted.
8. Remove patties and arrange them on the buns. Top with lettuce, tomato, guacamole, and crushed tortilla chips. Use any condiments as preferred.
