Ultimate Longhorn BBQ Burger

Ingredients

To make Cornslaw:
.5 cups Mayonnaise
3 tbsp White Vinegar
1 Tbsp Apple Cider Vinegar
2 tsp Granulated Sugar
2 tsp Kosher Salt
1 Tbsp Coarse Ground Black Pepper
3 cups Shredded Green Cabbage
.5 cup Shredded Red Cabbage
1 cup Canned Yellow Corn Kernals (drained)
1/2 cup Roma Tomatoes
Chopped Patties:
1.5 pounds Ground Chuck
.5 pounds Smoked Beef Brisket, diced
.5 cup Baked Beans drained and diced
.5 cup Minced Vidalia Onion
.25 cup Mild Green Chilis canned
1 tbsp Chopped Garlic in Water
2 tbsp Grey Poupon Mustard
1 tbsp Black Pepper
2 tbsp Kosher Salt
1 tbsp Hot Chili Powder
Vegetable oil , for brushing the grill rack
.25 cup Soft Butter
12 Slices of Texas Toast
6 tbsp Hickory BBQ Sauce

 

Instructions

To Make Cornslaw: In a large bowl, combine Mayonnaise, White Vinegar, Cider Vinegar, Sugar, Salt and Black Pepper. Mix thoroughly. To Mayonnaise mix, fold in Green Cabbage, Red Cabbage, Corn Kernals and Tomatoes. Keep folding until all ingredients are mixed thoroughly. Refrigerate until served. To Make Patties: Combine the Chuck, Brisket, Baked Beans, Onions, Green Chilis, Mustard, Garlic, Black Pepper, Salt and Chili Powder. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form each portion into large, thin round patty to fit Texas Toast. Brush Grill rack with Vegetable oil. Place patties on the rack, cover and grill until browned on bottoms about 3-4 minutes. Turn the patties and continue cooking until desired doneness, about 5 minutes for medium, 8-9 minutes for well. During the last few minutes of cooking, spread soft butter onto both sides of the slices of Texas toast and carefully place them on the edge of the grill to toast. When toasted, turn over to toast other side. To assemble the burgers, place patty onto a toasted slice of Texas Toast, drizzle one tablespoon of the Hickory BBq sauce over each patty, top each patty with equal amounts of corn slaw. Add the other slice of Texas toast on top of each Burger and serve. Makes 6 Burgers
