Umami Soy burgers

Ingredients:

1 tablespoon white truffle oil
1/4 cup chopped peeled shallots
1/4 cup sutter home Moscato
2 tablespoon soy sauce
2 tablespoons dijon mustard
2 tablespoons minced capers
1/2 cup jaloapeno peppers seeded and diced
2 whole eggs broken and shelll removed
1tablespoon fresh chopped italian parsley
1tablespoon fresh chopped majoram
1teespoon lemon zest
1/4 teespoon fresh ground white pepper
1-1/2 lb fresh ground sirloin of beef
6 kaiser rolls split and toasted
6 oz softened goat cheese
6 fresh leafes frisee lettuce
3 ripe avocado split peeled-pitted and sliced

Instructions:

prepare a medium hot grill hold ready. in a fireproof pan heat the truffle oil and saute the shallots for 3 minutes until golden brown , add Moscado and reduce liquid to half. cool and add soy sauce , mustard, capers, peppers,wisk in egss, add parsley, majoram, lemon zest,ground pepper and fold in to the beef. shap beef in to 6 pattys equaly devided.when the grill is ready, place pattys on the rack cover and cook on one side for 2 minutes, turning once until done to your preference 110 degree F .Toast the split kaiser rolls on the grill and set aside ,to assamble the burgers, spread equal portions of softened goat cheese on the bottom of each bun,followed by a burger patty.place one leafe of frisee on top of each burger with equaly devided avocado slices and top on an angle the remaining kaiser tops and serve
