Vietnamese Bahn Mi burger with pork pate,pickled cucumber and cilantro mayonnaise

1 english ccucumber
1 small onion
1/4 cup rice wine vinegar
1/4 cup lime juice
2Tbs fish sauce
1Tbs sugar
2 1/2 pounds pork shoulder
1/2 cup green onions
1 Tbs grated ginger
2 Tbs kosher salt
2 Tbs black pepper
2 garlic cloves
1/2 cup cilantro
3/4 cup mayonnaise
12 ounces pork pate or liver pate
6 6inch baguettes split



Cut cucumber in half and slice very thin lengthwise preferably on a mandolin, slice onion very thin and combine with vinegar lime juice,fish sauce and sugar in a small bowl and set aside. For patties place pork,green onions ginger and salt and pepper in food processor until its a medium grind.Form patties into 6 rectangular shapes to fit the baguette combine garlic cilantro mayo in a small bowl and set aside Slice pork pate into 2 ounce slices and reserve When grill is hot place patties on grill for 5-6 minutes per side Place patties on baguette and top with slide of pate pickled cucumbers and mayo and top with top of baguette
