Wagyu Wasabi Japanese Slaw Burgers

Japanese Slaw and Dressing
½ Tbsp Sugar
½ tsp Salt
½ tsp Fresh Ground black pepper
½ tsp Fresh minced garlic
1/3 cup Rice wine Vinegar
½ tsp Hot Oil (Chili Oil) If you like a real kick add up to 1 tsp
½ tsp Yellow mustard
8 oz bag 3 color deli Cole slaw (Carrots , cabbage and red cabbage) Plastic wrap or cover for large bowl Burger
3 Tbsp Soy sauce
2 tsp Ground Ginger or 1 tsp fresh
1 tsp Wasabi powder
1 lb Fresh Ground Wagyu Beef
4 Sesame seed buns
1/2 Red onion
1 ½ -2 tsp Wasabi powder
4 Tbsp Mayonnaise



Prepare grill to medium high direct heat for gas or charcoal. Cover to obtain fastest heating. Slaw should be chilled slightly before topping therefore it should be prepared first and chilled while burger is prepared and cooked. To make Japanese Slaw: In the bottom of a large bowl mix together dry ingredients: sugar, salt, fresh ground black pepper, and garlic. Wisk in rice wine, hot oil and mustard with dry ingredients until blended. Fold in cabbages and carrots with hand or spatula until coated. Cover and chill for 30 minutes or until burgers are ready for topping To make burgers: Wisk together soy sauce, ginger and wasabi in the bottom of a large bowl. Break up ground meat slightly and fold/press into sauce. Avoid over handling the meat or the meat will become tough. 4-6 turns should cover the meat in sauce. I use my hands. Divide meat into 4 equal portions. Mold portions into 4 burgers about ¾ inch thick. Place burgers on direct heat grill on medium high. Turn burger after 3-4 minutes point. For medium rare cook an additional 3 minutes on 2nd side, grill for medium well cook 4-5 minutes on second side. Remember not to press on the meat during grilling as the juices and sauce will burn away. Note: for Medium rare burgers of ¾ in. with direct heat 6-8 minutes on the gas grill. For Medium well burgers with direct heat 8-10 minutes on the gas grill With 2 minutes to go place buns on edges of grill for toasting. After cooking to desired doneness remove buns and burgers from grill. Remove Slaw from refrigerator. Slice red onion. Mix wasabi powder and mayonnaise. To build burger: Spread top and bottom of bun with Wasabi Mayonnaise. Place burger on bottom bun, top with red onion slices and ¼ to 1/3 cup of slaw. Place top on burger. Enjoy!
