Wild Bill Burgers

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


1 1/4 pound 80/20 ground chuck
1/4 cup Sutter Home Cabernet Sauvignon
3/4 cup Blue Cheese crumbles
1 tsp Original Wild Bill's Seasoning (tm.)
1 medium Vidalia sweet onion
4 Kaiser rolls 1 tbsp butter



Slice Vidalia sweet onion and sautee' until slightly caramalized. (Do not overcook as these will be reheated prior to service.) Set onion aside. Mix ground chuck with Sutter Home Cabernet Sauvignon, blue cheese crumbles and Wild Bills Seasoning. Do not overmix or mixture will become tough after cooking. Form mixture into 4 uniform patties and grill over medium high heat until desired doneness. While cooking burgers, butter and lightly toast Kaiser rolls just before burgers are done. Reheat sauteed onions just prior to service. Place patties onto Kaiser rolls and garnish with the sauteed onions. Serve top of Kaiser rolls slightly askew to show top of burgers on plate.
