Wild, Wild West Burgers

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


Chipotle Mayonnaise:
1 1/2 cups of mayonnaise
2 teaspoons of canned chipotle peppers, minced
2 teaspoons of abodo sauce, from canned chipotle peppers
Black Bean Relish:
3/4 cup of canned, black beans, drained
3/4 cup of canned, whole kernel corn, drained
1/4 cup of pimento, chopped
1/2 teaspoon of salt
1/4 teaspoon of white pepper
1 pound of ground sirloin
1 pound of ground chuck
2 teaspoon of seasoned salt
1/2 teaspoon of freshly ground peppercorns
1 tablespoon of hickory liquid smoke
6 (4" round)Kaiser rolls, split
12 tablespoons of butter, at room temp.
Vegetable oil for brush grill rack
6 romaine lettuce leaves



To prepare chipotle mayonnaise, mix mayonnaise, chipotle peppers, and adobo sauce. Cover and keep chilled until ready to assemble burgers. To prepare black bean relish, mix black beans, corn, pimentos, salt, and pepper. Cover and keep chilled until ready to assemble burgers. To make the patties, lightly combine ground sirloin, ground chuck, seasoned salt, peppercorns, and liquid smoke. Do not overwork the meat. Divide into 6 equal portions. Form each protion into a patty aout the size of one roll. Cover and keep chilled until ready to grill. To prepare rolls, spread cut side of each roll half with butter. Cover and set aside until ready to grill. Preheat gas grill to medium heat. Brush the rack with vegetable oil. Place the patties on the prepared rack, cover and cook, turning once, until completely done, about 5 min. on each sid. During last few min. of cooking, place rolls on outer edge of grill rack. Toast rolls for 3 min. on each side, or until golden brown. Remove burgers adn rolls from the grill. To assemble the burgers, place a grilled burger on the bottom roll. Top with 1 lettue leaf, folded to fit the burger. Top with a generous tablespoon of black bean relish. Spread one tablespoon of chipotle mayonnaise on the cut side of the top roll. Place on burger and enjoy. Repeat process with remaining burgers.
