Ybor City Picadillo Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients:

Burger Patties:
1/4 ib shaved boiled ham
1 3/4 lbs Ground Round
1/4 cup Sutter Home Cabernet Sauvignon
1 tsp ground cinnamon
1 tsp minced garlic

Picadillo Sauce:
1 tsp olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 tsp minced garlic
1/2 lb ground turkey
1/2 cup tomato puree
2 tbsp balsamic vinegar
1/2 cup Sutter Home Cabernet Sauvignon
1/4 tsp ground cinnamon
1/4 tsp ground cumin
1/2 tsp salt
1/8 tsp pepper
1/4 cup stuffed green olives with pimentos, sliced
1/2 cup raisins
1 tsp capers

1 tbsp olive oil
6 medium eggs
2 loaves Cuban Bread, cut to accommodate a burger
2 medium apples (Fuji or Braeburn)
1/4 cup sliced almonds

Instructions:

Preheat gas grill to medium-high.

To make burger patties, first mince ham. Place ham, beef, wine, cinnamon and garlic into a bowl. Mix gently to blend, but do not handle beef too much. Make 6 burger patties. Set aside.

To make Picadillo Sauce, heat olive oil in a large skillet. Sauté onion, pepper and garlic in oil until soft. Remove from pan and set aside. Place ground turkey into skillet and brown well. Transfer turkey to food processor and process until meat is finely ground. Place turkey, pepper, onion and garlic back into skillet. Add tomato puree, vinegar, wine, cinnamon, cumin, salt, pepper, olives, raisins, and capers to turkey mixture. Simmer for 10 minutes or until most of the liquid has evaporated, stirring steadily. Cover and move saucepan to outer portion of grill to keep warm.

Place prepared beef patties on hot grill for about 5 minutes on each side. Move to outer portion of grill. Brush oil onto a griddle placed on the grill. Place egg rings on griddle and break one egg into each ring (without breaking the yolk). Cook eggs until yolks are soft but not runny. Remove from heat and aside. Split bread and toast lightly on the grill. At the same time, core apples and slice horizontally to create apple rings (each approximately 1/8 inch thick); remove any core or seeds. Place bottom bun on plate; top with one apple ring, then a burger patty. Top with a fried egg and several heaping tablespoons of Picadillo sauce. Sprinkle with almond slivers, top with the bun and enjoy.
