Zucchini Parmesan Pita Pocket Burgers

Ingredients

4 cups shredded zucchini
1/2 lb. ground turkey
2 eggs
2 teaspoons salt
2 teaspoons ground black pepper
2/3 cup shredded mozzarella cheese
1/2 cup finely grated Parmesan cheese
1 cup ground Sourdough Nibblers
Colivita Extra Virgin Olive Oil
Parmesan Oregano Mayonnaise
1/2 cup mayonnaise
3/4 teaspoon freshly grated Parmesan cheese
3/4 teaspoon chopped, fresh oregano
2 large tomatoes, cut into ¼” slices
Colivita Extra Virgin Olive Oil
12 thin slices of mozzarella cheese
6 whole-wheat pitas

 

Instructions

Preheat a gas grill to medium-high heat, or prepare a medium-hot fire win a charcoal grill with a cover. To prepare the Zucchini Burgers, mix shredded zucchini with turkey, eggs, salt, pepper, mozzarella cheese, Parmesan cheese and pretzel crumbs. Separate into 6 pieces and shape into patties. Generously brush grill with Colivita Extra Virgin Olive Oil. Place burgers on preheated grill. Grill burgers for about 8 minutes and then turn. Cook the second side for about another 7-8 minutes. While burgers are grilling prepare Parmesan Oregano Mayonnaise. Stir mayonnaise, grated Parmesan cheese, and oregano in a small bowl. Cover mayonnaise with plastic wrap and refrigerate until ready to use. When the zucchini burgers are about 5 minutes from being done, brush both sides of the 6 tomato slices with Colavita Olive Oil. Place on grill and grill the first side for about 2 minutes. Turn the tomato slices and place 2 slices of Motzerella cheese on top. Close the grill to allow the cheese to melt. Create a pocket in the whole wheat pitas by making a slit half way around the pita- do not cut all the way around. During the last couple of minutes of grilling place the sliced pitas on the grill for 1-2 minutes on each side. Spread 1/6 of the Parmesan Oregano Mayonnaise inside the pocket of the grilled pitas, making sure to get a little on each side. Place the grilled tomato slices on top of each burger. Slide the burger into the pita pocket. Makes 6 Pita Pocket Burgers
